Candying, a historical know-howCandying fruits consists of removing water and replacing it by sugar. It starts in orchards and plantations where fruits are rigorously selected around the world, especially in Europe before arriving in Italy to be candied. Then they are prepared before being dropped in boiled water a few minutes, to put the fruits in condition by loosening the fibers. The sugar setting starts, the fruits are immersed in a syrup more and more concentrated. Then fruits are separated from the syrup: candied fruits are ready to be packed! Our partner factory, in Napoli, was automated and uses high technology to answer each year to new requirements. |

A COMMITTED CLEAN RANGESince 2018, Ambro Foods has been committed to reducing additives in its candied fruit on behalf of its customers and their new requirements. Today we are proud to present our clean range, a range committed to the complete removal of synthetic colorants and progressive removal of preservatives. For this range, we declare in our ingredient lists fruits, glucose, coloring agents based on concentrated fruit or vegetable juices and lemon juice. Nothing more! You can find the products of our clean range with the logo. |

The orange and citrus peels are obtained by a mechanical knife peeling. The whole peel is preserved, which ensure the presence of essential oils and aromatic essences of the superficial layer, guaranteeing the typical taste of citrus fruit. The homogeneity of strips is refined by cutting after confection.
The candied lemon peel strips are made from lemons grown exclusively in Sicily.
Our Amarena cherries are candied in a heavy syrup, according to a traditionnal italian recipe.
Strong taste, they will enhance pastries, especially the famous Black Forest.
Our Bigarreau cherries are candied in Italy and available whole, halves or chunks to be mixed with all the preparations such as cakes or brioches of kings.

From Italy. Our lemon and orange peel cubes are perfects for inclusions in pastries. Our citrus fruits mix, composed of 50% orange, 40% lemon and 10% citron is the special Panettone mix.
The candied lemon peel cubes are made from lemons grown exclusively in Sicily.
Orange and lemon cubes extra come from mechanically peeled and unsqueezed fruits, to preserve all of their flavor and guarantee a unique quality. They are also available in their stabilized version.
Our cubes are also available in 3x3 mm and 9x9 mm on demand.
